Honey Simple Syrup Instructions

1. We used 1 quart of honey to 1 quart of water, but you could use 1 cup of honey to one cup of water. The basic recipe is a ratio of one to one honey to water. Pour equal amounts of honey and water into a sauce pan on the stove top. Keep the heat to medium or medium low and stir until the honey is dissolved and the honey and water have now blended. Let cool. Your honey simple syrup will keep in the fridge for up to one month.
   
2. Remember that different varieties of honey will have different strengths and produce different flavor profiles (Buckwheat honey will have a more robust flavor compared to a Clover honey). You may wish to use different types of honey depending on your recipe such as cocktails or poaching fruit. A milder honey might be best with a 2 to one ratio to help produce a stronger flavor.
   

Poached Pears Instructions

1. Peel the pears. Once the honey simple syrup is finished and warm, add pears with the skin removed. The pears will float around in the simple syrup and as they slowly begin to absorb the simple syrup, gently stir and turn them. Keep the heat low.
   
2. If you’ve made the simple syrup ahead of time, gently rewarm it before adding the pears (or whatever you’d like to poach in the recipe).
   
3. Keep on low heat for about 15 minutes. We like to serve these warm and to top the pears with Asheville Bee Charmer Coffee-Infused Honey, Chai-Infused Honey and Cocoa-Infused Honey.
